Chicken Burrito Bowl

Happy Wednesday friends!!! 
I'm so excited to finally be sharing a new recipe with you! I haven't shared one in a really, really long time. I feel like everyone is in love with some kind of "bowl" lately. Most of them have rice and some kind of meat. And almost ALL of them have guac in them. I decided to make my own version. I needed a bowl with a lot of protein. This is prefect. 

I started following iifym (if you count your macros) so I've been making meals that have a lot more protein in them. I used to not eat nearly enough protein when I was just counting my calories. I'm going on week 3 counting my macros and learning a lot about what my body needs to feel good and lose weight. I promise to make a post next week on why I choose to count macros. 

But until then let's talk about this delicious and healthy burrito bowl. I think it taste just as good has a certain favorite restaurant. You could even add your favorite topping to it too. Like, cheese, sour cream, green onion and salsa! Also, I make a big batch of chicken for the week so that's what I used in this dish. 

Chicken Burrito Bowls 
Serves: 1
Total time: 30 minutes 

  •  Chopped chicken breast (120g), cooked
  • 1/2 cup of black beans
  • 1/4 cup brown rice, cooked 
  • 1 cup romaine lettuce 
  • 6 cherry tomato, chopped
  • 1/2 avocado

  1. Cook brown rice according to package. 
  2. Heat up chicken and black beans 
  3. Put lettuce in bowl then add cooked rice, black beans, chicken, avocado and tomato
  4. Add any extra toppings you would like!
