Healthy Cheesy Potatoes

Can you believe I actually have a recipe for you! I know I can't either. I was giving up on the recipe part of my blog. I will make some amazing and delicious recipes, get super busy entertaining Miss O and a million other things while dinner cooks then forget to take pictures. I'm usually half way through my meal when I remember. 
So, I'm pretty freaking exited I have one to share with you today. 

A few weekends ago while we were in Springfield. We headed over to a friends for dinner. They were making delicious wings, cheesy potatoes and corn on the cob. We brought the corn which was a hit. But to me the potatoes were the biggest hit. I mean they were cooked just perfect and soooo cheesy. I just knew they couldn't be good for me and probably had cream of something in the recipe. I did change a few of the original ingredients but I promise you'll never know. 

I remember asking Corey what was in the potatoes and she simply said a little chicken stock, a little sour cream and a few other things. I asked if they was any canned cream of anything and she said no. 

By this time I was dying to try the recipe myself. So, last night I did. In fact, we had them with wings. 
Clearly we are missing our dear friends! 

Now, I know your going to think, "gosh, there's so many steps to this" because that's totally what I thought too. But after making it this is totally what I'll be taking to family dinners from now on. One its healthy two its delicious EVERYONE will love! 

Serves: 6-8
Prep time: 30 minutes
Cook time: 50 minutes 

  • 3 pounds potatoes, peeled and diced
  • 4 tablespoons butter, unsalted
  • 1 garlic clove minced
  • 2 1/2 tablespoons whole wheat flour
  • 1/2 chicken stock, low sodium
  • 1/2 1% milk
  • 1/2 cup Greek yogurt, plain
  • 1/2 tablespoon parsley, chopped
  • 1/2 cup sharp cheddar cheese, grated 
  • pinch of salt and pepper
  1.  Add potatoes to a pot of cold water and bring to boil. Boil about 10 minutes. 
  2. Remove potatoes, drain and let cool. Preheat oven to 350 degrees
  3. In a skillet melt the butter over medium heat, add garlic cook for one minute. 
  4. Sprinkle in flour, stirring about 2-3 minutes. 
  5. Stir in chicken stock and milk. Continue to stir until thick, about 5 minutes. 
  6. Remove skillet from heat and stir in Greek yogurt. 
  7. In a large bowl add potatoes, Greek yogurt, cheese, salt and pepper. 
  8.  Pour mixture in a casserole dish that's been sprayed with cooking spray. Sprinkle more cheese if you want. 
  9. Bake for 50 minutes.
