Quinoa Tabouleh

So last week I trying to figure out what side dish I should have for dinner. I knew I wanted something delicious and different that I hadn't made before. So what's better than Quinoa. 
Quinoa is new to me I've only made it a couple of times but I'm really starting to love it! You can add it to just about anything you want. For example, I add cucumbers and black beans and some other stuff to this recipe. It turned out wonderful. I loved it so much and knew the hubs wouldn't even look at it so I had it for lunch a couple of times last week. 
Side dishes are the worst item for me to come up with. I usually just have a side salad or some Green Giant frozen veggies. I hate making something that I know my hubs won't eat so I normally just have something quick and easy. But I've been cooking Quinoa more and more plus its so easy to add whatever you please to it. Its so filling and good for you!
If you haven't given Quinoa a try I really think you should. I'm pretty sure you can find it any where. I live in a really small town and found it in my local Wal-Mart so go and buy it and try this recipe out! Its delish and the whole family will love it! 
P.S. Yes, my new love is Quinoa!

Recipe adapted from Healthy Cooking

§  2 cups water
§  1 cup Quinoa, rinsed
§  1 can (15 oz) black beans, rinsed and drained
§  1 small cucumber, chopped
§  1 small red pepper, chopped
§  1/3 cup minced fresh parsley
§  ¼ cup lemon juice
§  2 tablespoons EVOO
§  ½ teaspoon salt
§  ½ teaspoon pepper

1.       In a large saucepan, bring water to a boil.
2.       Add Quinoa. Reduce heat; cover and simmer for 12-15 minutes until liquid is absorbed.
3.       Remove from heat; fluff with fork. Transfer to a bowl and cool completely.
4.       Add beans, cucumber, pepper and parsley in a bowl mix well.
5.       In a small bowl whisk together lemon juice, EVOO, salt and pepper.
6.       Add everything to cooled Quinoa and mix well.
7.       Refrigerate until chilled.

    I have found that quinoa is pretty expensive at our local Wal-Mart. Last weekend when I went to H&M in Jamesport and found quinoa in bulk! It is the same price as Wal-Mart (or close to it), but you get SO MUCH MORE in a BIG BAG! If you eat quinoa all the time, and this was a great discovery. They also have chia seeds, whole wheat flour, and other healthy foods at H&M.
