Skinny Cupcakes


Here’s the post everyone has been waiting for… Skinny Cupcakes!!!
I’ve been waiting to try this recipe for a while. I’ve seen on Pinterest were people just take a can of diet coke and add to brownie mix to make them skinny. Well I found a recipe to take sprite zero and make skinny cupcakes!

I didn’t want to just make them for no reason. I really needed a celebration to make them, that’s why it’s taken me so long to get these on here. I know it sounds silly but I wanted people to try them out other than just me and the hubs. It makes 16 cupcakes and that’s way more than the hubs and I need for just the two of us.

So last Thursday was Chris’ grandpa’s birthday. So what better excuse to make some delicious skinny cupcakes than to celebrate his birthday! I mean come on, perfect timing!!  

The great thing about these is the cupcake AND frosting are only 110 calories, so next time you need to whip up something for a birthday or BBQ remember you can have your cake and eat it too! These were perfect.

I enjoyed 1, 2 maybe 3, of course not all at once, without the frosting (not a cool whip fan yuck!). Kids would never know the difference. Everyone at Chris grandpa’s loved them! So enjoy this easy, skinny and delicious recipe!



Servings: 16
Total time: 30 minutes

 Ingredients
Recipe adapted from Six Sisters’ Stuff
Cake mix
§  1 box of cake mix (I used Funfetti)
§  12 oz Sprite Zero

Frosting Ingredients
§  1 8oz container Fat-Free Cool Whip
§  1 (1.5oz) Fat-Free Vanilla Jello Instant Pudding (just the powder)

Preparation
For Cake:
1.       Preheat oven to 350.
2.       Line cupcake pan with cupcake liners.
3.       In a large bowl mix together cake mix and sprite zero. Combine until smooth.
4.       Spoon ¼ cup in cupcake liners. Bake for 20 minutes.
5.       Let cool before frosting.

For Frosting:
1.       Mix together cool whip and pudding mix with electric mixer until smooth. Spread over cooled cupcakes.
2.       Enjoy!

  1. I can't believe those are that low in calories, well worth a try. I have to say, you're VERY brave making those for family without trying them first. I ALWAYS try new stuff at home first, if hubs and kids spit them out then I know not to take them anywhere else, LOL!

  5. Did you bake your cupcakes in those adorable cupcake holders or did you place them in their afterwards for decoration?

    I baked them in the cupcake holders.. They are reusable ones I got from TJ Maxx probably 6 months ago. They were the first time I used them and I love them!!!
