Skinny Beef & Noodles




As we all know Saturday marked the first day of Fall which makes me very, very happy! I mean who doesn't love the cooler weather, fall candles, all things pumpkin, Thanksgiving and comfort food! 
Comfort food is probably my favorite thing in the whole world. I'm pretty sure you already know this.

Since Fall was officially Saturday and Chris has been CRAZY busy this week and all of last week with JR Football games and meetings I knew he would be really happy to know I was making a fabulous meal. Shh he doesn't need to know its a skinny version! 

Although, yes it is skinny its still DELICIOUS! Its easy and very comforting. Plus I serve ours with mashed potatoes. So beef and noodles with mashed potatoes, I know I can see the excitement on your face. You can think me later for this fabulous recipe.

Kids and picky eaters are going to love this. Its super easy to make and really doesn't need a whole lot of ingredients, just basic ones I always seem to have on hand. I love making this on a cold winter day when its snowing outside. 
I could really have this meal 5 times a week its so good. So enjoy!!!


 
Servings: 6
Total time: 45 minutes

Ingredients
§  1 lb flank steak (or round steak) cut into cubes
§  1 ½ cups low-sodium beef broth
§  4 cups egg noodles
§  4 cups water
§  ½ teaspoon pepper
§  ¼ teaspoon salt
§  1 tablespoon EVOO

Preparation
1.       In a 4 qt pot heat EVOO. Add flank steak and cook until browned.
2.       Add beef broth and bring to a boil.
3.       Reduce heat and simmer for about 18 minutes.
4.       Add water and bring to a boil.
5.       Add noodles and boil for about 10 minutes, until noodles are cooked through.
6.       Remove from heat and let stand 10 minutes.
7.       Enjoy!
