Spinach and Mushroom Scramble




Ok, so I know I haven’t been on here in at least a week. Hubs started teaching again and I feel like it was crazy busy last week with him starting school. Although my schedule didn’t change much it felt crazy to me! Anyways, he had a great first week back and we are so happy to be on a regular schedule again! I was very spoiled this summer and got to see him all day every day but I’m pretty excited for Friday night football games!
Sunday’s are my weigh in days! Ugh most Sunday’s I hate weighting in but for some reason I thought yesterday would be a good day and it was! I lost 2 pounds last week. Might not sound like a lot but to me it was a good amount! I started doing Zumba along with my running. Who knew being a dancer for 15 years that Zumba would be harder than heck! Man does it really make you sweat. It’s such a great workout so if you’ve been thinking about it I would totally say go and do it.

Also last week I decided I wanted to try something different for breakfast. Normally I just have one piece of toast and 3 egg whites with a little salsa. I’m the girl that will eat the same thing over and over again for breakfast mainly because I hate buying a whole bunch of different things and using them once to make a delicious breakfast. I want something fast and healthy. But last week I was watching a video on My Fitspiration (blog I read) by Olivia and Hannah from Biggest Loser 11 and she made this amazing looking omelet. So I decided to make something a little like that! And it was delicious now it’s my go to meal. I can’t get enough of it! Normally on the weekends I make something nice for the hubs and I but this weekend I stuck with my same Spinach scramble! Its hearty, healthy, delicious and sooo filling!

I know you are going to enough this one! And it only takes about 20 minutes to cook up. I know a lot of you don’t have a lot of time in the morning due to getting yourself ready and getting your kiddo ready for school/daycare but this takes no time at all plus it’s filled with vitamins and keeps you full until lunch. So go and try this for tomorrow’s breakfast! Enjoy!!!

Total time: 20 minutes

Ingredients
Recipe adapted from My Fitspiration
§  2 tablespoons onion
§  2 tablespoons chopped baby bella mushrooms
§  1 cup baby spinach
§  4 egg whites
§  Pinch of salt and pepper
§  Salsa, optional

Preparation
1.       In a non stick pan spray cooking spray then add onions. Cook about 2 minutes until slightly brown.
2.       Add mushrooms and cook another 2-3 minutes.
3.       Add spinach and cook until its welted down.
4.       Add eggs and scramble. Add salt and pepper.
5.       Enjoy. 

Note: I chopped all my onion and mushroom and keep in container for the whole week.
