So this last week it’s been a little chili, I mean really it’s been 75-80 degrees but to mean that’s WAY cooler than the 110 degree weather we’ve been having! I was craving something easy and something that I love cooking in the fall. I really wanted to make a nice healthy slow cooker recipe. So I put my thinking cap on and did it!
Chris and I don’t eat beef that much, mostly because we prefer turkey and chicken more but once in a while we like it for something different. Also, my mom and dad get a cow every year (grass fed) to eat on all year and she’s trying to make room for another cow they are getting in October so she sent us home so a few things of beef. She gave us this amazing looking roast I couldn’t wait to make. And since it’s been somewhat cooler weather I made us a healthy slow-cooker roast last night. It was UH-MAZING! Even the hubs loved it and he’s not much of a roast fan! I know you’re going to love this one, it’s super easy just 10 minutes the night before then you throw (not literallyJ) in your crock pot and let it cook while you at work and trying to get back into the grove of things with a new school year arriving!
Total time: 10 minutes prep, 6 hours cooking time.
§ 2-3 pounds of beef roast
§ 3 tablespoons chili sauce
§ ¼ cup BBQ sauce (I used something low sodium)
§ 1 tablespoon low sodium soy sauce
§ 2 teaspoons Worcestershire sauce
§ 2 tablespoon brown sugar
§ 1 tablespoon paprika
§ ½ teaspoon black pepper
§ ¼ teaspoon salt
§ ½ tablespoon chili powder
§ 1 teaspoon oregano
1. In small bowl mix together chili sauce, BBQ sauce, soy sauce, Worcestershire sauce, brown sugar, paprika, salt, chili powder and oregano.
2. In baking dish place beef roast and spread half of marinade of one side then flip over the roast and pour rest of the marinade over beef and spread.
3. Place foil over roast and refrigerate overnight.
4. Next morning place roast in crock pot on low for 6-8 hours or high for 4 hours.
