Sausage & Pepper Sandwich

The hub has football camp all week this week! I know I can’t believe it’s almost school time again L I’ve enjoyed having Chris home all summer.

So this week since football camp is at night time I knew I could make what EVER I pleased for dinner. Anything at all and I don’t have to worry about if its hubs approved or not! So I can’t lie and say I’m not excited to cook this week because I am! I have some amazing recipes I’ve got going on. Including the one I’m going to share with you now.

Today’s recipe is Sausage with Peppers. It’s sort of a guy food but sometimes I like that. Just kick back and enjoy a nice BBQ meal. But don’t you worry ladies this is low calorie and doesn’t have a lot of fat! I cut the fat by using chicken sausage which tastes just the same and you can feel good about putting this in your month. And honestly you’ll be happy to know your hub is going to enjoy this and you know it’s healthy for him. J Enjoy!!

Servings: 4
Total time: 30 minutes

§  1 tablespoon EVOO
§  1 red bell pepper, sliced
§  1 orange bell pepper, sliced
§  1 yellow onion, sliced
§  Pinch of salt and pepper
§  4 chicken sausages, uncooked
§  4 whole wheat buns. ( I used Sara Lee 80 calorie bun)

1.       Preheat grill. Cook sausages until cooked through.
2.       Heat EVOO on medium-high heat.
3.       Add peppers and onions cook about 5 minutes then turn down to medium-low and cover.
4.       Cook until slightly browned and soft. About 20 minutes.
