The Cobb Salad

The last few days have been extremely hot out! I’m talking so hot I break into a MASSIVE sweat just letting my dog out to pee. It only takes 2 maybe 3 minutes and I come back in smelling like I just worked out for an hour. I love summer but I could deal without 107 degree weather!

So what’s better on a hot summer day than a nice refreshing salad! Well to me there really isn’t anything better it’s light and crisp plus requires little cooking! Now, if you were to ask my husband he’d laugh in your face but that’s just because he’s picky so on hot days like today he’s on his own when it comes to lunch and dinner.

Anyways, back to the salad, I know you’re going to love this recipe it has a TON of toppings and its really low calories! It my favorite type of salad! There isn’t anything much better than a nice Cobb salad that has a ton of topping and a nice light dressing. Oh and did I mention its totally healthy and delicious!

Also, I’m just going to tell you now sorry for so many pictures but I was pretty excited about how my plate looked and also I’m using a big fancy new camera a Canon Rebel so I was very excited to test it out! J Enjoy!

Servings: 1
Total time: 15 minutes

§  1 cup spinach
§  1 cup romaine lettuce
§  ½ cup chopped tomato
§  ½ cup chopped cucumber
§  ¼ cup grated carrot
§  2 slices cooked turkey bacon, chopped
§  2 hard boiled eggs, chopped
§  Light Balsamic Dressing

1.      Toss spinach, lettuce and carrots together.
2.       Top with the rest of topping and dressing
3.       ENJOY! J
