Turkey Meatloaf Muffins

Yesterday I started a new workout plan and man is it kicking my butt! It’s a 12 week program created by Jamie Easton (www.bodybuilding .com). A while ago I told my husband I wanted to tone my arms and asked him what exercises I should be doing. He told me to get online to bodybuilding.com and told me to look at their different plans. I did just that and found Jamie Easton’s LivFit Trainer. She looks amazing and thought her plan would help me best with trying to turn my flabby skin into muscle!

While looking over her workout plans I noticed she has some great looking recipes on there so for tonight’s dinner I thought I would try one. I’m made Turkey Meatloaf Muffins! I’m so excited not only is it meatloaf that’s low-calorie and healthy but they are totally cute!! I can’t wait until you give them a try because my hubs loved them and anything he loves I know is good enough for you guys. Although the recipe does call for some onion and celery and the hubs is really, really picky I left those items out of half the meatloaf muffins then added to my half. This is something even your kids are going to love. It’s totally easy to put together. Enjoy!

Servings: 12
Total time: 10 minute prep, 40 minutes baking.

Recipe adapted from Jamie Easton
§  2 pounds ground turkey
§  3 egg whites
§  1 cup quick cooking oats
§  ¼ teaspoon ground cumin
§  ½ teaspoon dried thyme
§  2 teaspoons ground mustard
§  2 teaspoons black pepper
§  2 teaspoons chipotle pepper spice
§  1 teaspoon salt
§  1 tablespoon garlic powder
§  1 small onion, finely chopped
§  2 celery stalks, finely chopped

1.       Preheat oven to 375.
2.       Spray muffin pan with nonstick cooking spray.
3.       Mix all ingredients together in a large bowl.
4.       Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a tennis ball.
5.       Bake for 40 minutes.
