Skinny Egg McMuffin

Every morning the hubs and I usually have the same old boring thing. I was really getting sick of it and wanted something different. Honestly I really wanted some McDonald’s but I knew there was no way I wanted to waste half my calories on something that would make me feel like crap an hour later. I was really tempted but instead I thought I should just make a homemade skinny version. So I did just that.

Normally when we go to there for breakfast I always get the breakfast burritos but I was really hungry for an Egg McMuffin. Don’t ask why I have no idea it just sounded good. So I decided to make a skinny version that I would love even more! I did just that! It was easy and delish! I cooked the eggs the night before in my muffin pan and when cooled stored them in a container in the fridge. This morning all I had to do was warm the egg and Canadian bacon and toast my English muffin. Took me about 5 minutes and it was amazing! I know you’re going to enjoy this one. It something healthy but great tasting for the whole family!

Servings: 12
Total time:  20 minute prep night before, 5 minutes morning of.

§   English muffins
§  Canadian bacon
§  12 eggs
§  Light American cheese
§  Salt and pepper to taste

1.       Preheat oven to 350. Spray 12 cup muffin pan with nonstick cooking spray.
2.       Place one egg per muffin cup.
3.       Cook eggs for 18 minutes
4.       Next Morning warm egg in microwave for about 2 minutes.
5.       Warm Canadian bacon for about 1 minute.
6.       Toast English muffin.
7.       Place egg, cheese and Canadian bacon on English muffin.
8.       Eat and Enjoy!
