Chris and I grill A LOT, I mean A LOT in the summer and there's nothing I love more than fresh veggies out on the grill. I have never really tried it until last summer and it was life changing. This summer I have been up to trying new veggies, ones I haven’t really tired before and some that I’ve had but just wasn’t cooked good enough. So I gave myself a challenge and decided I was going to grill a vegetable that I haven’t even had before. The lucky winner was zucchini!
Man, where has zucchini been all my life. Honestly, my mom or papa probably gave it to be when I was little and didn’t like it or didn’t think I liked it. I did that with a lot of foods but the older I get the more I am to trying different foods. If only I could get my hubs to be this way. Anyways, so I decided I wanted to try grilled zucchini. I had it at a restaurant a few months ago and it was ok but nothing I was in love with. I knew that I could make it WAY better and boy was I right. This is a great side dish and zucchini is fairly cheap and in most grocery stores now days. Really, if you haven’t ever tried it this is the best way to try it for the first time. Enjoy!
Total time: 30 minutes
§ 2 zucchini cut into about ½ inch rounds
§ 1/8 cup EVOO
§ ½ teaspoon garlic powder
§ ½ teaspoon onion powder
§ ¼ teaspoon black pepper
§ 1/8 teaspoon salt
1. Cut zucchini into ½ inch rounds.
2. Place in plastic zip lock bag. Add EVOO, garlic powder, onion powder, black pepper and salt. Shake until everything is evenly coated.
3. Place zucchini in a grill basket or place foil on grill and place zucchini on top.
4. Grill for about 25 minutes or until tender. I did it over medium heat.
