BBQ Chicken Quinoa Salad

I’ve been trying to find more recipes that call for Greek yogurt. Everyone I know seems to love the stuff but I can’t get over the thickness of it. It’s too much like sour cream to me then with the fruit pieces in it, just isn’t doing it for me. I’ve found a few recipes I can’t wait to try but here’s my first I want to share with you.

BBQ Chicken Quinoa Salad. It’s made with a Greek yogurt based dressing so I thought this would prefect for a hot summer day. It was indeed delicious! The BBQ sauce mixed in the Greek yogurt really changed the taste and it didn’t seem like yogurt to me. Just looks and tastes like this amazing new dressing for BBQ food! I was pretty excited! Also, while making this I tried Quinoa for the first time and I have to say it’s pretty tasty! I even think my hubs would like it for something different other than rice.  Not to mention it’s really healthy for you. Fills you right up too! Enjoy this light salad with new flavors!

Total time: 25-30 minutes

Recipe adapted from Iowa Girl Eats
§  1 cup Quinoa
§  2 cups water
§  2 chicken breast
§  2 ears of corn
§  ½ cup black beans
§  ¼ cup fat-free shredded cheese
§  ¼ cup plain Greek yogurt
§  ¼ cup BBQ sauce (plus 3 tablespoons for chicken)
§  1 cup romaine lettuce

1.       Rinse quinoa very well in a fine mesh sieve under cold running water. Combine with the water and cook according to package directions.
2.       Meanwhile, season both sides of the chicken breasts with salt & pepper, then grill over medium-high heat for 4-5 minutes a side, or until no longer pink in the center.
3.       Add corn to the grill at the same time, and rotate every couple of minutes to evenly char on all sides. Remove chicken and corn to a plate and let cool slightly.
4.        Shred or cut chicken into cubes, then mix with BBQ sauce. Slice kernels off the cob.
5.       Mix together Greek yogurt and BBQ sauce in a bowl.
6.       Evenly divide the cooked quinoa, shredded BBQ chicken, lettuce, grilled corn, black beans, and shredded cheese between four plates. Drizzle with yogurt and BBQ sauce mixture.
