Very Berry Pops

I’m back! I know I’ve been gone for a while but things got crazy busy around here! I’m back now and can’t wait to share with you guys some amazing recipes I’ve been cooking up! Hope everyone is enjoying their wonderful 3 day weekend.

Now that its summer I have a fantastic kid-friendly snack! What’s better on a hot summer day than something cold and sweet, nothing is so I’ve got the perfect recipe for you! It’s a healthy berry fruit Popsicle! I mean come on, nothings better than a FANTASTIC Popsicle and its healthy. It’s totally out of the world good!

Servings: 4
Total time: 10 minutes prep, 5 hours to freeze

§  3 cups fresh strawberries
§  ½ cups fresh blueberries
§  ½ cup water
§  ½ cup of sugar
§  Juice of one orange

1.       In a small saucepan over medium-high heat stir sugar and water until it dissolves and liquid is transparent, about 5 minutes. Remove from heat and let cool.
2.       In food processor, puree strawberries and blueberries.
3.       In a small bowl combine berries, sugar/water and juice of one orange. Mix well
4.       Pour mixture into ice-pop molds, leaving about ¼ inch at the top.
5.       Place in freezer and freeze 4-5 hours.
I had to run hot water of one mold for about 10 seconds then the berry pop came right out.
