Pumpkin Protein Bars


I love pumpkin and wanted to make some pumpkin protein bars. I eat them as a snack when I’m feeling hungry and I know it’ll be a while before I cook dinner. They are prefect! They were totally easy to make and are very yummy and moist!! I got the recipe from the website I get my workouts from. www.bodybuilding.com Don’t freak out, because I did a little when my hubs told me I should go there and get different workouts to help build muscle. First thought, “Are you crazy, I do NOT want to look like a body builder!” Little did I know that it really helps build muscle and isn’t just about body building. Total Time: 45 minutes

Ingredients
Recipe adapted from Jamie Eason
§  ½ cup brown sugar (I used Splenda)
§  1 (4 ounce) jar baby applesauce
§  2 teaspoons ground cinnamon
§  ¼ teaspoon ground nutmeg
§  ¼ teaspoon ground clove
§  1 teaspoon baking powder
§  1 teaspoon baking soda
§  ½ teaspoon salt
§  2 teaspoons vanilla extract
§  4 large egg whites
§  1 (15 ounce) can raw pumpkin
§  2 cups oat flour
§  1 scoop vanilla whey protein
§  ½ cup almond milk
§  ½ cup chopped walnuts (optional)

Preparation
1.       Preheat the oven to 400.
2.       Spray 9x13 baking dish with nonstick cooking spray.
3.       Combine first 11 ingredients and mix well.
4.       Add the final 3 ingredients (or 4 if adding walnuts) and mix until incorporated.
5.       Spread batter into the baking dish evenly and bake for 30 minutes.
