Whole Wheat Cinnamon Pancakes

Most mornings I just eat egg whites, fruit and yogurt. On the weekends I try and make something different. Something I know the both of us will love. Breakfast is probably my favorite food to cook. It’s super easy and I never mess it up. I wanted to share with you one of our favorite Sunday morning meals! Cinnamon pancakes! Oh yea, you read right and they are amazing, healthy too. This is something your whole family is going to love on a Sunday morning or during the week before the day gets started. Sometimes I freeze the extras so Chris can just microwave them in the mornings before work. I hope you enjoy this one! Enjoy!!!

Servings: 8
Total time: 25 minutes

§  1 ¼ cup whole wheat flour
§  1 teaspoon baking soda
§  2 tablespoons sugar
§  1 cup skim milk
§  ½ cup egg beaters (or 1 egg)
§  1 tablespoon vanilla
§  2 ½ tablespoons cinnamon

1.       In a large bowl mix together flour, baking soda and sugar.
2.       In another bowl mix together eggs and vanilla. Beat into dry ingredients until mixed well. Stir in cinnamon.
3.       Heat nonstick pan of medium heat. Spray a little nonstick cooking spray.
4.       Using 1/3 cup place batter in pan, cook until really bubbly then flip. Cook about 2 minutes on other side. 

Note: pancake is NOT burnt. Looks that way because of the whole wheat flour. J
