Crock Pot Chicken Parmesan


The other day one of my great friends came over and we hang out, gossiped and I cut and colored her hair (don’t freak out I’m a professional!) Anyways, she told me she was making chicken parm in the crock pot! I just knew I had to try this!! I mean it sounded so good and easy to cook. I got on Pinterest (I’m always on their longer than I should be!!!) and found the recipe. I found this amazing blog called Chef In Training. Let me tell you go check her blog out! WOW, she has some amazing looking food! But I will warn you, if you’re trying to lose weight, you might crave sweets after looking at her blog because I sure did! So I found her crock pot chicken parmesan and decided to skinny it up. I didn’t use a jar of spaghetti sauce like she  did I made mine with canned tomatoes and spices. I know you are going to enjoy this one because my hubby LOVED it and so did I.

Servings: 4
Total time: 10 minute prep, 6-7 hours in crock pot

Ingredients
§  2 skinless, boneless chicken breast (cut in halves)
§  ½ cup Italian bread crumbs
§  ¼ cup parmesan cheese
§  ¼ teaspoon pepper
§  Pinch of salt
§  1 tablespoon of EVOO
§  ¼ cup egg substitute (or 1 large egg)
§  ½ cup shredded fat-free mozzarella
§  1 (28 oz) can crushed tomato
§  1 (8oz) tomato sauce
§  ½ teaspoon oregano
§  ½ teaspoon basil
§  ½ teaspoon parsley

Preparation
1.       Spread EVOO in bottom of crock pot.
2.       Mix egg in a shallow bowl, in a different shallow bowl mix together bread crumbs, parmesan cheese, salt and pepper.
3.       Dip chicken in egg mixture then dip in bread crumb mixture, place in crock pot.
4.       Place mozzarella cheese on top of chicken.
5.       Cover cheese and chicken with crushed tomatoes and tomato sauce. Add oregano, basil and parsley.
6.       Cook on low 6-7 hours

NOTE: I cooked spaghetti noodles to go with our chicken parmesan. Remember I didn’t add the noodles to the calories.
