Potato Packs

As I said last night I would share with you guys our famous potato-foil-packs! They are so good and healthy! Low in calories and fat! I can remember my Papa making these every summer (more than once a week) on the grill with different vegetables. I love the potato and onion mixture he does. Since Chris is so picky I normally just make two different foil packs. I can’t wait for this summer and try with different veggies! I think Brussels sprouts would taste AMAZING! They are probably my favorite vegetable.Anyways, if you don’t have a grill or don’t like to, you could also bake these. Give these a try and tell me your favorite vegetable combination. Enjoy!!

Serving: 1
Total Time: 45 minutes grill

§  2 russet potato, cleaned and cut into cubes
§  ¼ cup sliced onion
§  ¼ teaspoon season salt
§  ¼ teaspoon pepper
§  ¼ teaspoon dried parsley
§  1 tablespoon light butter (I used I can’t believe it’s not butter- light)

1.       Cut potato into ½ in cubes. Slice onion into thin slices.
2.       Take foil, place in small dish to form pack.
3.       Place potato, onion, salt, pepper, parsley and butter. Close foil tightly to make sure no ends are open. Don’t want butter to run out!
    Note: You could bake these in the oven at 400 for about 40 minutes.
