Healthy Mexican Pizza

So instead of having a Meatless Monday I’m having Mexican Monday! Mexican food is one of my favorite foods I don’t get enough of. Remember hubs is picky so I’m pretty limited to Mexican foods I can cook, meaning ZERO! And I’m not ready to go to our local Mexican restaurant or our new taco bell.  Yes, you read right my town is so small that we just got a brand new taco bell. Of course I went and tried it out once, when hubs said he wanted some cinnamon sticks but I try and stay away from there because I know I will gain some weight back even if we go once a month or something. I’m still learning a little thing call moderation. So for today’s lunch I wanted to make something Mexican/ Taco bell style. I made a healthy Mexican Pizza! Let me tell you this is way better than the Taco Bell version. Mines healthy and yummy!! Enjoy

Servings: 4
Total time: 15 minutes

§  1 can fat free refried beans
§  4 whole wheat tortillas
§  ¼ cup chopped yellow onion
§  2 tablespoons taco seasoning, less sodium
§  1 teaspoon paprika
§  2 tablespoons water
§  3 tablespoons Monetary Jack cheese
§  2 tablespoons green onion, chopped
§  2 tablespoons salsa
§  Sour Cream, optional

1.       Preheat oven to 350.
2.       Place foil on a baking sheet and spray with nonstick cooking spray.
3.       Place two tortillas on baking sheet. Spray tortillas lightly with cooking spray. Cook 6 minutes. Flipping half way.
4.       Meanwhile, in a small sauce pan heat beans, yellow onion, water, paprika, taco seasoning and 1 tablespoon cheese.
5.       When beans are heated through and well combined and tortillas are out of oven and cooled down its time to make a pizza.
6.       Take one tortilla and spread ¼ cup of bean mixture on it then add tomato and place other tortilla on top. Spread another ¼ cup of bean mixture. Top with tomato and green onion, salsa and rest of cheese. Add sour cream if you would like. ENJOY!
