Healthy Baked Spaghetti


I was dying for something with pasta in it and I know my husband was too. Really, I think we could have been 100% Italians because we love pasta so much! I mean doesn’t everyone?! I was really craving baked spaghetti and thought we could just go to our local restaurant that has it on their menu but I knew that’s a no-good-choice for us so I made it homemade. I personally think it tasted way better! I’m pretty sure my husband would have eaten the whole thing, ok who am I kidding I wanted to eat the whole dish it was that good! I love recipes like this because it was super easy and I felt like one of those Italian wives’s. Ok really I just secretly want to be one!  I really hope you give this one a try!! Enjoy!

Ingredients
§  6 ounces whole wheat spaghetti
§  2 teaspoons EVOO
§  1 pound mild Italian pork & chicken sausage, casings removed
§  1 (28 ounce) can crushed tomatoes
§  ½ teaspoon seasoned salt
§  ¼ teaspoon Italian seasoning
§  ½ teaspoon oregano
§  Pinch of pepper
§  1 cup fat free shredded cheddar cheese

Preparation
1.       Prepare pasta according to package directions; drain.
2.       Heat oil in a large skilled. Add sausage and cook, breaking it up until browned.
3.       Stir in seasoned salt, Italian seasoning, oregano and pepper. Cook with meat for about 2 minutes.
4.       Stir in canned tomatoes and bring to a boil. Reduce heat and simmer for about 15 minutes or until the flavors are well blended.
5.       Preheat oven to 375. Spray a baking dish with nonstick spray
6.       Add cooked pasta to the meat and tomato mixture. Toss and combine well.
7.       Spoon half the pasta mixture into baking dish. Sprinkle with ½ cup cheese. Spoon the remaining pasta mixture over top and sprinkle the remaining cheese.
8.       Cover loosely with a tent of foil sprayed with nonstick spray. (don’t let foil touch cheese)
9.       Bake until the filling is hot and cheese is melted, about 20-25 minutes.
10.   Let stand 5 minutes before serving.
