Turkey Meatloaf

For dinner last night I wanted to make something that was easy and I could just pop in the oven, let it bake and relax. Although I didn’t relax, seems like there’s always something here that needs to be cleaned. It was nice to have the meatloaf in the oven while I did my own thing!! Don’t freak out when I tell you it takes an hour to bake. Sometimes I need that hour to get caught up on laundry, dishes and other household stuff so the hour really goes by fast and it was super easy to put together. If you have a really busy week and don’t have a hour to let it bake it would be a great meal on the weekend for the whole family too! Hope you give this a try. My hubs said he really liked it, even took some leftovers for lunch.

Servings: 4
Total time: 1 hour (5 minutes to prep)

§  1 pound ground turkey
§  1 teaspoon EVOO
§  ½ cup breadcrumbs (I used whole wheat0
§  ¼ cup ketchup
§  ¼ cup egg beaters (or 1 egg)
§  1 teaspoon marjoram
§  ½ teaspoon garlic powder
§  Dash of salt and pepper

1.       Preheat oven to 350
2.       In a medium bowl mix turkey, EVOO, breadcrumbs, egg, ketchup, salt, pepper, marjoram and garlic powder.
3.       Shape mixture into a loaf shape, place in a un-greased baking pan
4.       Cook 1 hour. Before cutting let it sit for about 5 minutes.

I had some other veggies on the side but I'm really picky about my food touching so that's why it doesn't look like very much food :)
