Southwest Salad with Creamy Dressing

Here is something I saw on a website and printed it out about, oh a year ago! I never made it. I always got on this kick that I was ready to get healthy and about two weeks I'd just quit! So when I was cleaning my kitchen and getting rid of clutter I found this recipe so I thought I would make is since I’ve been on a great track and share it with you! Also, if you enjoy a creamy dressing this is one you are going to want to put on everything!!  So enjoy!!

Servings: 1
Total time: 20 minutes

§  ½ ripe avocado
§  ½ cup packed freash cilantro
§  ½ cup nonfat plain yogurt
§  1 clove garlic, quartered
§  1 tablespoon lime juice
§  ½ teaspoon sugar
§  ½ teaspoon salt
§  ¼ teaspoon pepper
§  3 cups mixed greens
§  ½ cup black beans, canned rinsed very well.
§  ½ cup corn, canned drained
§  ½ cup grape tomatoes, cut in half

1.       Place avocado, cilantro, yogurt, garlic, lime juice, sugar, salt in a blender: blend until smooth.
2.       Place greens on plate, top with corn, beans and tomato.
3.       Add 2 tablespoon of dressing.
