Chicken Fajita Pizza



I wanted to try something different for lunch today that was easy, with few ingredients and taste delicious. So I thought of taking two of my favorite meals and making them healthy and combining them into one! I love, love, love Mexican food. I mean who doesn’t! It’s always cheese, a little spicy and fried! Well I know I won’t be having any of that, so I thought of the one healthy Mexican meal which is a fajita and I thought I love pizza why not have a chicken fajita pizza and that’s what I’ve made to share with you today. Enjoy!

Servings: 1
Total time: 20 minutes

Ingredients
·         ½ cup  sliced green pepper
·         ½ cup sliced onion (I used yellow but you could use white)
·         2 oz sliced chicken. (I had leftover chicken breast I used)
·         1 Flatout light flatbread.
·         3 tablespoons fat-free shredded cheddar cheese

Preparation
1.       Preheat oven 350.
2.       Cook sliced onion and green peppers in pan for about 5 minutes
3.       Add chicken in with the peppers and onion cook about 5 more minutes
4.       Place chicken mixture on flatout flatbread. Sprinkle cheese on top.
5.       Bake in oven for about 10 minutes until cheese is melted.

NOTE: You can add fajita seasoning if you would like, I didn’t because I’m watching my sodium intake. Also you can use a low-carb whole wheat tortilla instead of the flatout flatbread.
