Baked Potato Soup

My hub has been sick over the weekend and still today, so last night I decided I would make him a nice warm soup. Soup always makes me feel a little better when I’m sick plus I could eat homemade soup every day I think. I love soup. I made a baked potato soup. I’ve made this before but I wasn’t watching how I made it with want ingredients to help make it healthy. Well this time I made sure I made it healthier and it still taste the same and wonderful! Trust me if my husband didn’t notice the different ingredients you won’t either ;-). Enjoy!!

Servings: 4-6
Total time: 30 minutes (doesn’t count time for cooking potatoes)

§  6 slices of turkey bacon (I cooked in the oven)
§  3 tablespoons of margarine
§  ¼ cup flour
§  6 cups milk (I used 3 cups skim milk and 3 cups 1%)
§  4 potatoes, peeled and cubed
§  4 green onions
§  1 cup fat free cheddar cheese
§  ¾ cup reduced fat sour cream
§  1 teaspoon salt
§  1 teaspoon pepper

1.       Cook potatoes in oven at 400 for one hour
2.       Cook bacon, crumble and set aside (4 slices for soup 2 for toppings)
3.       In a large pan on medium-high heat, melt margarine and whisk in flour until smooth.
4.       Gradually stir in milk whisking constantly until thick.
5.       Stir in potatoes and onion. Reduce heat and simmer about 10 minutes.
6.       Mix in 4 slices of crumbled bacon, cheese, sour cream, salt and pepper. Cook until all cheese is melted.
