Spaghetti and Turkey Meatballs

I was so excited when I thought of making this. I can remember my grandpa making his meatballs with his “secret” sauce for me when I was a little girl. I know it doesn’t taste quite the same but it is pretty darn close and oh so good! My husband was a big fan!


Servings: 6
Total time: 6-8 hours

Ingredients

For meatballs
§  ¼ cup egg substitute
§  ½ cup seasoned bread crumbs
§  ½ tsp. pepper
§  ½ tsp oregano
§  ½ tsp dried parsley
§  ½ tsp basil
§  1 lb ground turkey

For Sauce
§  1 can (28 oz) crushed tomatoes
§  1 can (6 oz) tomato paste \
§  1 tsp oregano
§  1 tsp basil
§  1 tsp dried parsley
§  ¼ tsp red pepper flakes
§  ½ tsp garlic, minced
§  ¼ tsp pepper

Prepartion
1.       Preheat the oven 400 and spray baking sheet with cooking spray.
2.       In a large bowl, combine egg substitute, bread crumbs, pepper, oregano, basil, parsley and turkey.
3.       Mix well together and shape into 1-in balls and place on baking sheet.
4.       Bake for 20-25 minutes or until no longer pink.
1.       Meanwhile, in a crock pot, combine crushed tomato, tomato paste, oregano, basil, parsley, red pepper flakes, garlic, and pepper.
2.       Once meatball are finished cooking add them to the sauce in the crock pot cook on low for 6-8 hours.
3.       Serve with whole wheat spaghetti.
