Italian Veggie Sandwich

I love sandwiches with fresh veggie, some meat and cheese and little sauce! Who doesn’t like them! My husband and I eat a lot of them in the summer.  So since it’s been so nice here in Missouri I thought I would make one for my mom and me for lunch! I wanted something different that stood out from all the other boring sandwiches! Well I think I came up with something good! Well at least my mom said she really liked it so I hope you will too!! We just had it with a little veggie salad.

Servings: 2
Total Time: about 20 minutes

§  ¼ cup thinly sliced red onion, separated into rings
§  ½ can of artichoke heart, rinsed and chopped
§  1 medium tomato
§  1 tablespoon EVOO
§  1 teaspoon black pepper
§  1 16-20 inch French style bread (I used whole wheat)
§  2 slices of provolone cheese
§  1 cup shredded romaine lettuce
§  ¼ cup sliced pepperoni
§  ¼ cup banana peppers

1.       Cut bread in half, (save on half for another day or if making for 4 serving use it) cut open and toast it.
2.       Place onion rings in a bowl with cold water to cover. Set aside
3.       Combine artichoke hearts, tomoato, oil, pepperand banana peppers in a medium bowl.
4.       Drain the onion and pat dry
5.       To assemble sandwiches, add provolone, pepperoncini then spread your artichoke mixture on top. Add lettuce and onion.
6.       Cut sandwich in half to make to servings! Enjoy!!
