Its lunch time!!!

So I really wanted to cook a new dish for lunch and I wanted it to be something different that I knew my husband wouldn’t eat (he’s SUPER picky). So after searching and searching for something new, different and easy to cook with not a lot of ingredients I found something! I made this last night (Step 2-5) then cooked it this morning while I was getting ready for work.
Quick Shrimp Enchilada Bake

Active Time: 20 minutes
Total Time: 45 minutes

Ingredients
§  1 pound, peeled cooked shrimp, tails removed
§  1 cup frozen corn, thawed
§  1 canned green enchilada sauce, divided
§  8 corn tortillas
§  1 can nonfat refried beans
§  1 cup reduced fat Mexican-style cheese
§  1 lime, cut into wedges

Preparation
1.      Preheat oven to 425°F. Coat a 9x13 inch baking dish with cooking spray.
2.      Combine shrimp, corn, and ¼ cup enchilada sauce in a microwave safe bowl. Cover and microwave on high until heated through, about 2 minutes
3.      Spread ¼ cup enchilada sauce in the prepared baking dish. Top with a layer of 4 tortillas overlapping. Spread refried beans evenly over the tortillas.
4.      Top beans with the shrimp mixture, followed by the remaining 4 tortillas.
5.      Spread refried beans evenly over the top tortillas. Pour the remaining sauce over the tortillas. Cover with foil
6.      Bake the casserole until it begins to bubble on the sides, about 20 minutes. Remove the foil; sprinkle cheese on top. Place back in the stove and continue baking until heated through and cheese is melted, about 5 minutes more. Sever with lime wedge

  1. I will have to say, I have never been one to take the time out and fix or even eat a good healthy lunch for myself, I have always put my family first. So when I was asked to have lunch with you today, I thought this would be nice, and then you said what we was having, The first thing that came to mind was (I really don’t know about this) But I have to say this was VERY good, and the best part I can say after all these years I can start eating healthy right alongside you every step of the way.
